Mashed Potatoes
Ingredients
4-6 potatoes, russet or yukon gold
½
cup milk
¼
cup scallions
1-2 tablespoons butter
Salt
Preparations
Peel the potatoes
Cut in quarters
Cover with water in large pan
Bring to a boil and cook until tender
In a separate pan, heat the milk and scallions
Add butter to potatoes
Add warm milk mixture to potatoes and mash
Salt to taste

Corned Beef and Cabbage
Ingredients
Package corned beef (estimate 15 minutes/pound)
1 head
white cabbage (do not remove outer leaves)
Preparation
Prepare corn beef according to package instructions in large pan
Cut cabbage head into quarters
Cut out heart of the cabbage
Cut large loose leaves in half
Cook in boiling water until tender
Serving Suggestions
On a large platter, arrange slided cabbage. Slice beef and arrange on cabbage. Garnish with mustard.
Irish Coffee
Fresh heavy whipping cream
1 tablespoon sugar
coffee
1 ounce Irish Whisky
Preparation
Whip heavy cream to thin consistency
Put sugar in bottom of cup
Add coffee
Add Irish Whisky
Pour heavy cream over the back of spoon into cup, should float on top of coffee
